Monday
Chicken in a Pot
Chicken pieces (you need to have skin ON)
Potato chunks
Carrot chunks
Onion chunks
Salt and Pepper
Cook all day in crock pot on low. Before serving, add frozen peas and let sit for a minute or two.
Tuesday
Navajo Tacos
Rhodes rolls, thawed. Flatten out and fry in oil (use an electric fry pan and do it outside. This way your house won't smell like scones the next day.)
Top with regular taco toppings. If you don't have hamburger, you can use a can of chili for the protein.
Wednesday
Mandarin Orange Salad
Spinach
Can of mandarin oranges, drained
6 strips bacon, crumbled
Sugared pecans (spray pan, warm it, add 2 Tbls brown sugar and broken pecans. Cook till sugar is melted and clumps on the pecans.)
Toss together and sprinkle grated parmesan or mozzarella cheese over it. Top with Poppyseed dressing. Can have Rhodes rolls with this meal since you'll have extra from yesterday.
Thursday
Chicken Pot Pie
Use leftovers from Chicken in a Pot. Mix with 1 or 2 cans cream of chicken soup. Top with prepared Bisquick or pancake mix. Bake for 1/2 hour at 350 degrees.
Friday
BLT's
Use bacon that cooked in previous meal. We often don't have "L" and it's just as good.
(As you all know, I don't measure anything. So my suggestion in all this is---trust yourself!)
