Monday: Taco Soup
1 lb Hamburger browned
1/2 onion diced
1 Package of taco seasoning
1 80z can of Tomato Soup
1 can of water
1 can of Pinto or red beans
1 can of Kidney Beans
1 can of Black Beans
1 can of Chili beans
1 Can of Corn
1 Can chopped tomatoes w/ own juice
Mix all together and cook in a crock pot or on the stove until cooked. Serve over tortilla chips with sour cream and shredded cheese. (Use as leftovers on Wednesday and any extra freeze!)
Tuesday: Chicken Quesadillas
1-2 Chicken Breasts
Tortillas
Cheese
Fry up chopped chicken in oil and garlic salt/powder. Butter tortillas and place on a griddle, and add chicken, season salt, and cheese. Top with salsa and sour cream. Eat with salad.
Wednesday: Taco Soup Leftovers!!!
Thursday: Skillet Macaroni Pizza
1 lb ground beef
1 can of Spaghetti sauce of choice
3 cups of elbow macaroni
2 cups shredded mozzarella cheese, divided
12 slices pepperoni, chopped and divided
Cook: beef in large skillet over medium-high heat
Blend: in 2-2/2 cups of water and spaghetti sauce; bring to a boil. Stir in macaroni, Reduce heat to medium; simmer 10-12 minutes or until macaroni is tender.
Stir: in half of cheese and pepperoni; top with remaining cheese and pepperoni. Let stand for 5 minutes or until cheese is melted.
Friday: MediterraneanSalad
3 eggs
1 can tuna
1/2 can corn
Lettuce
Spinach
Carrots
Diced green peppers
Olive Oil
Vinegar
Cheese Cubes
Hard boil eggs. Make salad as normal and top with hard boiled eggs, tuna, cheese, olive oil, vinegar, and salt. Yes, this is really how the mediterranean folks eat their salads and it is pretty darn good.
Saturday: You're on your own! (Freezer food i.e. pizza, burritos, etc...or date night =)
Sunday: Chicken and Rice (the Taylor favorite...no recipe needed)
