Chase and Joni's Meals for Nov. 3 - 9

Monday Meal:

Tin Foil Dinners

Meat of choice (we like chicken breasts or hamburger patty)
Seasoning of choice
Cut up potatoes
Cut up carrots
Cut up onions

Put all of the above on a flat tin foil piece and season with garlic salt, onion salt, season salt etc. (You choose!) Then put another tin foil piece on top of the food and roll up the sides so that the food is well sealed in between the tin foil. Place on a cooking sheet and cook at 375 for 30 minutes or so. Just check periodically to make sure the meat is cooked through. Also feel free to add any additional vegetables to the mix if desired. Pretty Yummy!

Tuesday Meal:

Enchiladas

2 chicken breasts
Can of Cream of Chicken soup (I sometimes add another can to make it go farther)
1 Cup of Sour Cream
1 Cup of grated cheese
Can of green chilies
8-10 Tortillas

Boil the chicken breasts until cooked. Meanwhile mix the can of cream of chicken soup, sour cream, green chilies, and half of the grated cheese. Once the chicken is done, shred and add to the soup/ sour cream mixture. Divide some of the mixture between the tortillas and roll up and put in a cake pan (Can do a smaller batch and put into a casserole dish too). Leave some of the mixture to put on top of the tortillas and sprinkle the remaining cheese on top of the mixture. Cover with tin foil. Bake in the oven at 375 for 30 minutes or until cheese is completely melted on top.

Wednesday Meal:

Chicken Cordon Bleu Sandwiches (Spelling??)

Breaded Frozen chicken patties
Sliced ham
Mozerella cheese
Hamburger buns

Optional:
Lettuce, tomato, and mayo

Place the chicken patties on a cookie sheet, top with Ham and mozerella and bake until meat is cooked and warm and cheese is melted. Put on a bun and add any of the optionals. Eat with some yummy veggies and chips!

Thursday Meal:

Enchilada Leftovers!!

Friday Meal:

Date night =) Eat out to your favorite restuarant or order out =)

Saturday Meal:

Frito Chili-Cheese Salad

1 can chili
Frito chips
Grated cheese
Sour cream
Lettuce
Tomatoes
Velveta Cheese (if you have leftover from Grandma's recipe)

Melt 1/2 pound cubed velveta cheese in chili. Place chips on plate and you know the rest. This chili cheese mixture also makes a GREAT snacking dip!

Sunday Meal:

Sweet and Sour Meatballs and Rice (Yummy!)

2 lbs lean ground beef
2 cups of ketchup
1 cup packed light brown sugar
1 Tbs. prepared mustard
2 tsp. Worcestershire sauce
2 tsp. soy sauce

Shape ground beef into 1 inch balls and place in a shallow baking pan. Bake at 425 for 15 minutes or until meat is lightly browned. Drain on paper towels and place in a sprayed slow cooker.

Combine remaining ingredients with 1/4 cup of water and pour over the meatballs. Cover and cook on HIGH 1 1/2 to 2 hours or until sauce is thickened. May serve with toothpicks. Makes 60 Meatballs. Meanwhile cook rice and serve with the meatballs and have a vegetable of choice. This is a great meal and has lots of leftovers...if you have questions, give us a call!
