January 10th to January 17th

Sunday Jan 11th

Cheesey Chicken

Chicken breasts in crockpot. Sprinkle the chickenbreasts with garlic powder, salt, and pepper. Add a can of Cheddar Cheese soup and a can of Cream of Chicken soup. Cook 3 hours on high or 6 hours on low. Serve with mashed potatoes. The soups will make a gravey. Add a veggie and you are good to go.

Monday Jan 12th

Chicken and Bean Skillet

Stir fry 2 diced chicken breasts with salt and pepper. Add 1 can diced tomatoes, 1 can black beans, 1 can kidney beans, 1/2 cup diced onions, and 1/2 cup diced peppers. Add 1/2 pkg taco seasoning. Add 1/2 cup water and turn to low and cover. Cook for 1/2 hr Serve with tortillas, cheese and sour cream.

Tuesday Jan 13th

French Bread Pizza

Cut French bread in half. Spread french bread with spagetti sauce. Sprinkle with cheese and add pepperoni or hamburger or the topping of your choice. Bake in 400 degree oven til the cheese is melted. Serve with a green salad

Wednesday Jan 14th

Home Made Hamburgers and Parmesan Potatoes.

Buns, sliced tomatoes and lettuce for hamburgers. Don't forget the onions!

Parmesan Potatoes
Preheat oven to 450 degrees. Line cookie sheet with tin foil and spray with cooking spray. Cube potatoes in 1/2 in cubes. Place in a bowl and toss with a tablespoon of oil. Combine 3 TB. grated parmesan cheese, 2 TB. parsley (2 tsp dried), 1 tsp paprika, 1/2 tsp garlic powder, 1 tsp salt and 1/8 tsp cayenne pepper in a small bowl. Add this mixture to potatoes in the bowl and toss to coat the potatoes. Put the potatoes on the cookie sheet and bake until potatoes are lightly browned. Turn and bake til tender. About 25 minutes.

Thursday January 15th

Tomato and Cheese pasta

4 C. penne pasta uncooked
chopp 2 small onions and mince 4 garlic cloves. Saute them in 2 TB olive oil. Stir in 1 can italian diced tomatoes, 1 tsp dried basil, 1 tsp dried oregano, 1/2 tsp sugar, and 1/2 tsp pepper. Bring to a boil and simmer for 15 minutes. While you are simmering this cook the pasta. Drain the pasta and stir in the sauce. Transfer to a greased baking dish. Top with 1 C. Mozzarella cheese and 1 C. grated parmesan cheese. Bake uncovered at 375 for 10 to 15 minutes
Serve with garlic toast and salad or veggie.

Saturday Jan 17th

Califlower, Broccoli Soup

Dice califlower, broccoli, and onions. Add salt, pepper, a little garlic, and I like Nature's seasoning. Barely cover with water and bring to a boil. Cook as much as you like. (I like the broccoli to still be bright green). Add 2 C. half and half or I also use a can of evaporated milk. Thicken with flour and water. Serve with rolls. I like to top with grated cheese
