Grandma was having technical difficulties with her computer, so I just talked her into letting me post her previous recipes for her post this time. Since everything was totally delicious last time, I'm sure they will be this time, too!
SUNDAY: Beef Stroganoff
2 pounds round or chuck steak
1 can mushroom soup
1 can cream of celery soup
1 pkg. dry onion soup
1 heaping T. sour cream
Cut up meat in chunks, put in baking dish. Add soups and mix all together. Cook covered at 250 degrees for 4 hours, until very tender. (Can be cooked in oven or slow cooker) Just before serving add sour cream. Serve over rice, noodles or mashed potatoes. Makes a great Sunday meal
MONDAY: Country Stroganoff Casserole
A can of cream soup of choice
1/2 cup sour cream
3/4 cup milk
1/2 cup mayonnaise
1 can tuna, chicken, or 1/2 lb. cooked hamburger
1 cup grated cheese (any kind will do)
1 T. parsleysalt and pepper to taste
1 T. lemon juice
3 cups cooked pasta (I use egg noodles)
Combine all ingredients. Pour into a 1 1/2 qt. shallow baking dish. Bake for 45 minutes in a 350 degree oven. Top with extra cheese the last 15 minutes of baking. Super easy and delicious. Can be mixed together in the morning and put in refrigerator until ready to cook.
TUESDAY: Spinach and Tuna Divan
2 packages frozen chopped spinach
1/4 cup butter
1/4 cup flour
2 cups milk
1/8 t.onion salt
1/4 t. dry mustard
1/2 t.salt
1/4 t.pepper
1/2 cup mayonnaise
1 T.lemon juice1 6oz. can of tuna
1/2 cup buttered cracker crumbs
Cook spinach until tender. Drain well. Make cream sauce using butter, flour, milk. Put in seasonings. Blend in mayo and lemon juice. Flake tuna into casserole dish (8 by 12 in. or so). Cover tuna with 1/2 of the sauce. Mix remaining sauce with spinach. Pour over tuna. Top with cracker crumbs. Bake at 350 degrees for 20-25 minutes or until hot.
WEDNESDAY: Chicken Casserole with Sour Cream
Cooked chicken breasts, cut in chunks(enough to cover bottom of casserole pan)
3/4 cup chicken broth
1 can cream of celery soup
1 can cream of chicken soup
8 ounces sour cream
1 pkg stove top dressing,chicken flavor
1 cube butter melted
Line pan with chicken pieces. Combine soups and sour dream. Pour over chicken. Spread UNCOOKED stuffing mix over soup mixture. Melt mutter and mix in the chicken broth. Pour over bread crumbs. Bake at 350 degrees, uncovered for 50 minutes.
THURSDAY: How about having a leftover night? I like to cook once and eat 2 or 3 times. You should have plenty left of any of the previous meals.
FRIDAY: Date night! If you don't go out, have a 2nd meal of one of the casseroles
SATURDAY: Broccoli Cheese Soup
1/2 cup butter
1/4 cup flour
3 cups chicken broth
3 cups milk
1/4 t. salt
1/2 t. pepper
2 cups fresh broccoli florets
1/2 lb. Velvetta cheese, shredded
1 cup shredded cheddar cheese
Melt butter in a large pot over med heat. Mix in the flour and salt. Reduce heat to low and cook, stirring constantly, about 3 minutes. Mix in the chicken broth and milk. Simmer on very low heat about 10 minutes.Wash and cut up broccoli. Put in a glass bowl with 1 T. water and cook in microwave for 2 minutes or so. Set aside. Gradually mix in the Velvetta cheese and cheddar cheese into the large pot and stir until melted. Mix in the broccoli, breaking it up as much as you like. Continue cooking about 5 minutes. Very yummy! (I added more flour mixed with water to make mine a little thicker)
