Monday:



Taco Soup

I brown hamburger and onions. After I drain the hamburger I add a can of tomato soup (add water), taco seasoning, chopped tomatoes, a can of black beans (drained), kidney beans (drained), pinto beans,and a small can of corn. If you like it spicy hot add chopped tomatoes with chiles instead of the plain. This makes quite a bit but it freezes well. We eat it with tortilla chips, cheese, and sour cream.

You need: 1 lb hamburger, 1 can tomato soup, taco seasoning, chopped tomatoes, black beans, kidney beans, pinto beans, and a small can corn. Tortilla chips, cheese, and sour cream.



Tuesday:



Italian Pasta

Cut up 2 chicken breasts in 1 inch cubes. Cut up carrots, onions, broccoli, and any other veggies that you like. I like it with zuchinni and califlower too. Heat 1 TB olive oil in a skillet and add the chicken about 5 min. Remove the chicken from the skillet. Heat another tablespoon of oil and add carrot. Stir for a few minutes and then add the other veggies and a minced garlic clove. Garlic powder works too. Stir for about 2 minutes longer. Cook Angel hair pasta according to directions. While the pasta is cooking add 2 cups chicken broth 1 tsp Italian seasoning and thicken with cornstarch. Add chicken back in and serve over pasta with parmesan cheese on top. Serve immediately. You can serve this with breadsticks or garlic bread



You need: 2 chicken breasts, 2 carrots, broccli, califlower, onions, olive oil , Angel hair pasta, parmesan cheese, and chicken broth (canned or powder)



Wednesday:



Sloppy Jo's and potato salad

I make my sloppy jo's with hamburger, onions, and barbeque sauce. You can also use canned sloppy jo mix or the dry mix. If you add a tsp of mustard, a TB sugar, and a couple of tablespoons of milk to your miracle whip you will have a better tasting potato salad.
Add a vegetable.
You need hamburger, sloppy jo mix, onions, potatoes, (I use pickles and boiled eggs in my salad)
Miracle Whip, and mustard.



Thursday:



Linguine with beef strips

1 lb.lean beef steak sliced into 1/4in thick slices. 1 cup julienned carrots. Mix 1 tsp Italian seasoning (or 1/2 tsp each of oregano and basil) ,1 tsp coarsely ground pepper, 2 minced garlic cloves, and 1/2 C. thinly sliced green onions. Add steak and toss to coat. Dissolve cornstarch in 1 C. beef broth. Cook 8 oz. linguine. Meanwhile heat a large skillet on med-high heat and add steak. Stir fry for about e minutes. Remove steak. Stir broth mixture into skillet. Boil, stirring continually for about 1 minute. Return steak to skillet. Add carrots (you can also add 1 cup of red or green bell pepper slices. I like it with the peppers.) Cook for 5 minutes. Drain pasta and add to the skillet; toss with steak and veggies. Serve immediately

You need 1 lb. lean steak, carrots, Italian seasoning, garlic, green onions, peppers, and linguine.



Friday: Left over Taco soup




Saturday: Salsbury Steak and Baked potatoes



Make hamburger patties. Brown on both sides in a skillet. Put in a baking dish. Slice an onion and layer the slices over the hamburger patties. Make brown gravy (you can use the hamburger drippings with beef broth but I use the gravy packets you buy in the store)

Cover with foil and bake in the oven the last 30 minutes while you are baking the potatoes. Serve with your favorite veggies.

You need: Hamburger, onion, brown gravy packet, and potatoes



Sunday: BBQ chicken and rice pilaf



Chicken in a crockpot with BBQ sauce.

2 TB butter melted in a saucepan. add rice and pan fry for about 3-4 min. add 1 cup of angel hair pasta broken into 1/2 in pieces. (If you look in the Mexican section of your supermarket they have small packets of these.) Brown the pasta. Add 4 cups of chicken broth and 1/4 C.

minced onions. Turn the heat down to medium low, put a lid on it, and cook for 20 minutes.

Serve with your favorite veggies.

You need: Chicken (any kind), BBQ Sauce, rice, pasta, bullion or chicken broth, and onion.
