Meals for November 17 - 23.

Potato Soup (can easily use this for two days)

1 cup chopped onion
1 cup chopped celery
2 cups diced potatoes
3/4 cup butter
3/4 cup flour
1 quart milk
1 1/2 tsp. salt
1/2 tsp sugar
(can add ham, bacon, or whatever)

Cut up vegs, barely cover with water, and cook till soft. While doing that, melt butter, add flour. Blend and cook a minute or two. Add milk, salt, sugar. Cook till thickened a bit (maybe 10 minutes or so). Then pour in the vegs along with the water you cooked them in. Cook a bit longer. It thickens as it sits.

Salad with Chicken
* Cook up extra breaded chicken and add to a hearty salad.


Porcupine Meatballs

3/4 cup uncooked minute rice
1 lb hamburger
1 1/2 tsp salt
1/4 tsp pepper
2 Tbls minced onion

Mix the above together and form into small meatballs. (I make this in my crockpot, but I'm sure you could do it in a regular pan on the stove or in the oven.) In pan (or crockpot), mix one can of tomato soup and 1 cup hot water. Place meatballs in the soup mixture. Cook till meat is browned.
